Meet at the St. Helena farmers market at 8 am to gather just-picked local berries and stone fruit before heading to Greystone at 9 am, where you’ll make flaky pie dough from scratch to create rustic fruit galettes, baked in professional bakery ovens.

Guided by a CIA chef, you’ll learn about the role of flour, fat, and liquid in pie dough, along with essential techniques for mixing, rolling, and shaping these free-form tarts that you’ll take home to share with family and friends.
