TASTE OF CIA COOKBOOKS When it comes to cooking, we wrote the book—and then some! Our wide variety of cookbooks cover just about every culinary niche, from brunch and breads to butchery and braising. In these 5-hour hands-on classes, you'll chop and cook and bake from our pages and then take the book home to do it all again in your own kitchen. Maximum enrollment: 14 people per class Pricing: $250.00 per person Baking at Home – The Breads Baking bread at home may seem intimidating, but with the right tools, techniques, and ingredients, home-baked bread doesn’t seem so difficult after all. In this hands-on class, we’ll show you what it takes to make perfectly-baked bread each and every time. We’ll discuss available flours and yeast products, preferred equipment, and professional, yet simple, methods. You’ll get the chance to roll up your sleeves and practice the basics of creating delicious breads, from proper mixing and gluten development to the 12 steps of bread making. Then, you’ll get to sample all your delicious creations. Participants of this class will receive a CIA logo apron and a copy of Baking at Home with The Culinary Institute of America to take home with you.
Directions:
The CIA is approximately 1/4 mile north of the town of St. Helena on the left, 1 1/2 – 2 hours north of San Francisco in the heart of the Napa Valley.
